Czech Stop Kolaches

Everyone always talks about the Czech Stop, that fabled highway-side kolache bakery that’s the only thing worth mentioning between Austin and Dallas. Now that I’ve eaten there, I understand why kolaches are so beloved. Every kolache I’ve ever had is just a pale impersonation of the Czech Stop. The dough is light and flavorful and the sausage filling substantial. Every other kolache dough is listless and flat in comparison.
