Prickly Pear Smoothy

nopalitos

I was hanging out with my good friend Peter Gabriel, when we decided to make some delicious and healthy smoothies while we watched our stories. Normally, we would have added some lime to all those frozen bananas and strawberries. But since we were all out of limes, the only tangy and green ingredient we had on hand were frozen nopalitos, or prickly pear cactus. That’s right, we’re so Texas that even our fruit smoothies have cactus.

It turned out pretty good too. Cactus has a slightly viscous texture that worked well in the smoothie format.
