Now you know you’ve ordered the right dish at a Chinese restaurant if they ask you if you’re sure. I had never had intestine before (pig stomach, pig ear, pig snout, but not intestine) and I heard it was good.
Imagine my surprise to find that not only did the dish come with the guts of the pig, but its coagulated blood too! And all of this in a delicious sechuan spicy oil. The intestines were pretty good too, a little rubbery perhaps, but definitely flavorful.
